I'm not claiming this is an "authentic" Irish bacon & cabbage...but it is good, and it is simple. I had about a half a head of cabbage sitting in the fridge that I really needed to use, and of course, I had bacon. Mmmmmm....BACON. St. Paddy's day is coming up soon, so I figure I'm just getting warmed up.

Bacon w/ Cabbage

Ingredients (serves 4)
- 8 ounces bacon, sliced into 1/4-inch strips
- 1/2 head green cabbage, cored & cut into 1/4-inch ribbons
- 1/4 teaspoon caraway seeds
- pinch salt
- few grinds black pepper
- white wine vinegar, to taste
Instructions
Saute bacon in a large pan over medium-low heat until just done. Add the cabbage and the caraway seeds to the pan, stir and toss to combine. Cover and turn the heat down to low, cooking for ~20 minutes, or until the cabbage is good and tender.
Taste and adjust seasoning with salt and pepper. Add a few glugs of vinegar, to taste.
Serve alongside some shredded or mashed potatoes, and some sausage, if you want to get really porky.
