Now, some may use the argument that if it's been packed away for over a year and you haven't used it, you don't really need it. WRONG! It's been packed away for a year because although we moved from a house with a teeny-tiny kitchen to one with a roomier, small kitchen...I still don't have the storage space aside from an array of "storage" boxes stashed in the basement that I aspire to. I totally need that awesome little tea service I found at Goodwill 3 years ago. I absolutely need the set of 7 onion soup crocks with lids, thank you very much that I haggled from a yard sale 5 years ago. And YES, I definitely, without a doubt, need the popsicle molds that have only been packed away for a little over a year.
Your honor, I'd like to submit evidence of that fact by entering this recipe that I've had my eye on (off and on, really) for the past..ooooohhhhhh...5, maybe 6 months. I am NOT a packrat! I think it was back in the March issue of Whole Living body + soul that I saw a recipe for some Berry Buttermilk popsicles...and in a happy twist of fate, I ran back across it just when I needed it most- high Popsicle-season! I just halved the amount of berries of my choice and substituted peaches for that amount...because I thought it sounded good.
In this case, my intuition was right on...five people in the house devoured 11 popsicles in a flash. Well, 2 flashes...I made everybody wait for their 2nd one. At least an hour. No really...one the first day, one the next. Oh, and you know how I said 5 thumbs up? While that's true, I must admit one of those thumbs was a little shakey and diagonal...because LT-oldest child...thinks he doesn't like cranberries. Whatever.
Buttermilk n' Fruit Popsicles
adapted from a recipe in Whole Living body + soul March '10 issue
yield: 10-12 popsicles, depending on size of your mold
1 1/2 cups cultured Buttermilk
1 banana
3/4 cup cranberries, fresh or frozen
1 or 2 peaches, pitted and chopped to equal 3/4 cup
1/4 cup honey
Purée all of the ingredients in a blender until smooth. Pour into popsicle molds and freeze. If you're inserting your own sticks, do so after 1 hour of freezing...let freeze at least another hour or so until firm.
Packed full of creamy, tangy, fruity goodness...you'll want to make these again and again! Feel free to substitute whatever types of berries & fruit you want to equal 1 1/2 cups (plus the banana, it doesn't like to be forgotten)...substitute the honey with agave nectar, if you so desire. But DO try them. And hey, I even followed the example of TKW and let the kids eat Popsicles for Breakfast...why not!?I almost forgot to mention that one of el gato's decided to puke all over the cover of said magazine last night...while it sat ON THE KITCHEN TABLE. Did I mention I don't like recycling certain magazines...I keep them for all eternity. Ugh. I knew you'd be interested...
*Update 8/6/10...made them with kiwi and pineapple replacing the cranberry & peach...good! Not as good, though.
