Yup. Mexi knows how to keep me happy, doesn't he!? As I was sitting at the computer, doing a bit of early morning "work"...Mexi was busy in the kitchen....
Earthy, spicy, delicious enchiladas smothered in crema, avocade, queso, cebollitas, and cilantro...I could have totally gone for a cerveza with my breakfast this morning... Summer vacation is good. Oh, and nope, no recipe. Just a little neener-neener-totter. Happy Monday!

Jose...exactly!!! Although, I like chilaquiles just a tiny bit more...cuz i leave the chips a bit less "cooked"...so they're still a bit chewy...oh yum!! And YES, it's still going on.
