Sqash Blossom Quesadillas
from the kitchen of girlichef
tortillas
squash blossoms
melting cheese
salsa verde or amarillo
Heat a heavy skillet or comal over medium-high heat. Once it is very hot, set a tortilla on top. Cover it with melting cheese, layer it with squash blossoms, drizzle it with salsa, cover it with another tortilla. Once the bottom is golden and toasty, flip it and make that side golden and toasty. Commence eating.
Show it off...or just eat in peace...

ReplyDeleteWhen I was a kid my tia Maria would fix something similar to this for us kids. Then she took the blossums, stuffed queso inside then slid the the flower into a green chile and made chile relleno with blossom centers. I hadn't thought of those in years. Yum. Thanks, The Olde Bagg
