Chewy Oatmeal Cookies with Apples, Pecans, and Cinnamon Chips

yield: ~4 dozen
1 c. unsalted butter, room temp.
3/4 brown sugar, packed
1/3 c. sugar
2 eggs
1 tsp. vanilla
1½ c. ap flour
1 tsp. baking soda
2 big pinches fine sea salt
2 1/3 c. rolled oats
½ c. toasted pecans, chopped
½ c. dried apples, chopped
1 c. cinnamon chips
Preheat oven to 350° F. Beat butter and sugars in a large bowl until light and creamy. Beat in eggs, vanilla, and apple butter. Gradually beat in the flour and salt. Fold in the oats, pecans, apples, and cinnamon chips.
Drop by rounded tablespoons onto a lined cookie sheet. Bake for 12-14 minutes, or until golden. Cool on tray for a minute or so, then remove to a wire rack to finish cooling.

ReplyDeleteOh yum Heather, they look scrumptious. What I like in my cookie depends on the cookie (if that makes any sense). We don't get cinnamon chips up here, BUT I'm headed to the States this weekend so you can bet I'll be looking for them at the nearest grocery store and stocking up.

What the heck are cinnamon chips? That question out the way I love dried fruits and seeds and nuts in my cookies, although I have to admit chocolate chip will always be my favorite! Thanks for sharing on Vegetarian Foodie Fridays!

These cookies look scrumptious! I love all of the chunky bits in them. I have to draw the line at raisins though. I love the flavor of them but I just don't like to bite into them in my cookies. I'm a little weird that way.

I am totally with you on that..i like me cookies with nuts n definitely want them chewy..I CAN NOT stand a crunchy cookie..some of the local stores here have my kind of chewy oatmeal cookies but this one with all the nuts n apples looks a hundred thousand times better!!

ReplyDeleteYour cookies look delish and filled with just the right amount of extras. I live with a houseful of raisin haters. The only thing they will eat in cookies are chocolate chips....no nuts, no raisinis, no dried fruit, no coconut. Which means that every batch I make containing those dreaded items I get to eat all by myself :( LOL

Heather, we're making these RIGHT NOW! Will let you know how they turn out . . . 'cept I could not find 'cinnamon chips' in my iddy-biddy town (will have to drive to Greenville tomorrow to Whole Foods or Fresh Market to find them), so instead we used toffee chips. No nuts either due to hubby's fussiness over them; but he's the baker, and I can't complain about that! This is the second recipe of yours that I've made! Voted for you!
