Soft Buttermilk Waffles

Sometimes, the simplest, most basic meals are the ones that we crave the most in our house.  The kids...okay, and the adults...always get excited when the waffle machine makes an appearance on the counter.  This rectangle waffle shape is a fairly new acquisition.  I've had a Belgian waffle maker for years, but sometimes I'm overwhelmed by the grandness of the Belgian, so I'm glad to be able to switch up now.  Buttermilk waffles that are soft and fluffy on the inside with a golden crisp outside are excellent in and of themselves.  But my favorite way to eat them is layered with salty, meaty bacon and drizzled with warm maple syrup.  Washed down with a gulp of coffee. Aaaahhhh.  I feel like I've been talking about breakfast/brunch quite a bit recently. Hmmm.  Guess I'm feeling a "start your day right" vibe.  These will definitely get your motor runnin'.
Soft Buttermilk Waffles
adapted from Quick-Fix Southern
makes 10-12 

¼ c. butter
2 Tbs. coconut oil
1¾ c. ap flour
¾ tsp. baking soda
1 tsp. salt
1/3 c. sugar
1 egg
1 c. milk
¾ c. buttermilk
Preheat a waffle maker according to machine instructions.  

Combine butter and coconut oil in a microwave-proof cup and melt, ~45 seconds.  Combine flour, baking soda, salt, and sugar in large mixing bowl.  Whisk egg, milk, and buttermilk together in a medium bowl and stir into dry ingredients.  Slowly pour in melted fats and stir until combined.

Spray waffle maker w/ non-stick cooking spray.  Pour by ¼ cups into each section of waffle maker (or if yours holds a different amount, then obviously use that amount.  Or use a belgian waffle maker...which would give you ~2 full waffles).  Cook until done.  Repeat with remaining batter.
You know what's almost as good as eating soft buttermilk waffles hot from the iron?  Having some in your freezer to reheat in the toaster for a speedy breakfast.  And it just so happens that these freeze very well. Simply line then up on a sheet tray that has been lined with wax paper or parchment and freeze.  Transfer to a freezer bag after they've been in the freezer for about a half an hour.  You don't want to wait to long and lose them to freezer burn.  Pop them in the toaster for a few minutes...until they're golden and a delicious smell is wafting up through those narrow slots.

  8. Oh those pictures! Yum! I would love to know what kind of waffle maker you have. I hate mine- it makes a horrendous noise and the waffles are soggy. I will take any and all suggestions for a new model.

  17. Angela...this particular waffle maker brand is Grand Gourmet. I found it on clearance for a mere $13 (!) at my local Meijer store. I think it works great, but there is one corner that gets slightly less crispy because the steam seems to "pool" there. All in all, I like though. =) Good luck on your hunt for a good one!

  25. you're a lady after my own heart - bacon and waffles and syrup are divine altogether. do you know what's just as awesome? putting crisp, chopped up bacon pieces into the waffle batter then cooking the waffles. so good. soo, soo good. i think i stole that from Joy the Baker and it totally blew my mind. bacon. in. your. waffles.

  26. rebekah....YES! I do like the bacon in the actual waffles, too. I like it broken into bits, but sometimes, I'll just lay whole slices across the batter and close the waffle maker and let the whole pieces be encased in waffle!! It's AWESOME!!

  31. Heather, my husband makes pancakes every Sunday, and sadly not quite so often, he'll make waffles with the waffle maker that I gave him for Christmas one year.   33. Shame on me. I never make waffles. Like you, I encourage the use of a waffle maker, although the one I did have I gave away. They freeze GREAT which is a huge plus.

    My son-in-law is the waffle maker in the family. Too bad he lives in Idaho. But, my daughter and her family are coming this summer. They'll be lots and lots of waffles then.

    Now you have me craving waffles and ice cream!!!
