Products need reviewing. Suddenly I look down and realize that my thighs and waist need shrinking. And it's not just the obvious "appearance" aspect. I feel tired and rundown and just plain "ick". I (try to) give myself a kick in the butt (literally) and throw on my too-tight pants and get my uncomfortable butt outside and moving. Walks and bikes and rollerblading are the things that make me feel human again. And I know seeing me take time to enjoy physical activity encourages the kiddos to get out and move, as well. Throw some healthy foods into the mix, and my pants are fitting better in no time...my head is clearer...my eyes are brighter and my tail is bushier. This is an excellent meal to add to your healthy repertoire...

Avocado, Salmon & Cucumber Salad
from the kitchen of girlichef
serves 2-4
serves 2-4
1 medium tomato, small dice
1 small red onion, small dice
2 small jalapeños, small dice
½ English Cucumber, peel, de-"seed" & small dice
½ bunch cilantro
2 ripe avocados
juice from 2-3 limes
5 oz. cooked Salmon, flaked (or use a 5 oz. pouch of Bumble Bee Premium Wild Pink Salmon)
sea salt or kosher salt
freshly ground pepper
Combine tomato, red onion, jalapeños, and cucumber in a medium bowl. Run your sharp knife through the cilantro a few times and add that to the bowl, too. Cut the avocados in half and remove the pits. If you want to serve your salad in the avocado halves, then scoop out the flesh, leaving a ¼" rim of avocado attached. (Alternately, if you don't want to use the avocados for serving, simply scoop all of the flesh from the skin and dice.) Dice the avocado you removed and add to the bowl. Add the lime juice and toss everything together gently. Taste and season with salt and pepper...add more lime juice, if you like. Fold in the salmon. If you are using the avocado halves to serve, sprinkle first with a little bit of lime juice (to help keep it from discoloring) and then scoop the salad into the shells. Otherwise, scoop onto plates lined with your choice of lettuce or tender greens.

ReplyDeleteGreat looking meal! Sounds like a great initiative. Well, I'll tell you this: Patty @zomppa suggested I watch the documentary Fat, Sick & Nearly Dead (recommended) and she started juicing...so that prompted me to watch it and get more veggies in my diet. I'm now on Day 5 of a 7 day juicing fast and wish I could eat my computer screen b/c your dish looks delicious, but I can't. I have to wait. Sigh. But I will say, I will continue to juice b/c they are delicious and such a great way to add vegetables and fruit - and get all those micronutrients in!
