Some days are just made for simplicity. Take for instance a Tuesday. Last Tuesday. The sun shone brilliantly against a cloudless sky, making for a beautiful yet brisk morning and afternoon (it is November, after all). After spending a little over a half an hour at the school and catching up on a few straggling dishes from the morning and vacuuming the house, I felt like it was a day to keep things uncomplicated. So with the sun warming the house through windows with the curtains thrown back, I decided it was the perfect time to catch up on a few of my shows waiting, anxious to be watched, in the DVR. Since midday was in sight, I stopped in the kitchen on the way to the television. It doesn't get much quicker than a brothy bowl full of simple noodle soup. Within 15 minutes I was curled up with a steaming bowl to watch the season premiere of The Next Iron Chef. Simple is good.
Vermicelli Soup w/ Lemon, Butter, & Mint
slightly adapted from Apples for Jam by Tessa Kiros
serves 4-6
7 c. chicken broth
juice of a lemon
2 Tbs. butter
4 oz. vermicelli, broken up
salt, as needed
freshly grated Parmesan cheese
freshly ground black pepper
4 mint leaves, torn (or a little crushed dried mint)
Pout broth, lemon juice, and butter in a pan. Bring to a boil, then lower heat to simmer for 6-7 minutes before adding pasta. Cook pasta until just al dente, season and add salt, if necessary. Remove from heat and ladle into bowls. Grate some Parm and black pepper over each bowl and then a scattering of mint. Serve immediately.

I think this soup has Mama's name written all over it!
ReplyDeleteFor some reason I never think about putting spaghetti type noodles in soup. Just the wide flat noodles. Love the combination of flavors here and great presentation. Thanks for posting the recipe Heather.
ReplyDeleteHeavenly chioce! Thanks for sharing with Presto Pasta Nights
ReplyDeleteQue sopa más rica, me encanta
ReplyDeleteSuch a bowl of simple goodness. ;-) Thanks for sharing with Souper Sundays too. ;-)
ReplyDeleteThis is so fantastically simple, and exactly what I'm craving as I'm stuck with a summertime cold!
ReplyDeleteAmazing what a little lemon juice will do to a broth like this. Yep, simple is best!
ReplyDeleteA great bowl to curl up with! Absolutely comforting.
ReplyDeleteAnd you vacuum? Can you come over? And also bring brothy noodles? Thanks!
There are definitely a gazillion times every week when I get home from work and just want simple. I'm so making this next time that happens!
ReplyDeleteWhat a great recipe! I love noodle soups and this looks fast and easy.
ReplyDeleteI need to try it soon. Great pics btw.....
Simple is good. Just that little lemon floating on top makes me want a bowl. (Of course, it helps that I love lemon!) Looks delicate and elegant, yet homey at the same time. Very pretty!
ReplyDeleteThis seemsw like the perfect soup for a day like today Heather!
ReplyDeleteLove a good comforting soup. soup with mint interresting combination, i think.
ReplyDeleteMy type of comfort meal. Yummy!
ReplyDeleteDelicious one..
ReplyDeleteLook delicious, I made a soup too! lol
ReplyDeleteThis looks perfect. Satisfying flavors and simple to prepare.
ReplyDeleteSimply delectable! Which reminds me, I better get some stock brewing ASAP! Love the addition of mint too. This soup reminds me of a soup my grandmother use to make. At the last minute she would drizzle in a scrambled egg. I think it's called Stracciatella.
ReplyDeleteThanks for sharing, Heather...
BTW, I mailed your "prize" yesterday. Please let me know when it arrives...
Maybe this will appease my son. For weeks he has been asking me to make a soup I did before that "was like Ramen and had skinny noodles in it". For the life of me, I can't remember what he is talking about.
ReplyDeleteI love the addition of the butter and lemon. Very nice recipe.
ReplyDeleteIf my mum would have made a vermicelli soup with lemon, I would have finnished the bowl. But my mum didnt and I ended not liking soups. So mum and dads out there, give your children good food, like this deliciouse soup recipe from Girlichef. ;)
ReplyDeleteBookmarked. I like your idea of simplicity.

ReplyDeleteTake care..
i like your idea of simplicity. this looks so clean and flavorful, delicious!
ReplyDeleteI love the whole combination and the final product looks great!
ReplyDeleteDelicious. Sitting on the couch with a warm bowl of soup that is filled to the brim with noodles is the best feeling. It's like all is right in the world.
ReplyDeleteYou know what's funny Lea Ann? I was thinking that exact same thing when I was making this. I actually do prefer the wider, flatter noodles in my soup, but this was a nice change. Another option, ya know? ;)
ReplyDeleteThat looks soooooooooo delicious. Yummy. Love the soup bowl/dish. Great shape.
ReplyDeleteI am going to follow and become a new subscriber so I don't miss any recipes. :)

This is the go-to comforting meal that everyone in the family makes for themselves if I'm not cooking. I've never done it with mint - that would be a refreshing change!
ReplyDeleteThat is an absolutely gorgeous bowl of soup.
ReplyDeleteSounds perfect for a beautiful fall day here; we make sweet dishes with vermicelli and a couple of savoury ones. No soups; this sounds delicious!
ReplyDeleteI know, I love almost everything in Apples for Jam!
ReplyDeleteOh yes, that would have made you feel better...if only for a short time :D
ReplyDeleteGorgeous! I think I would have had to break an egg into it though - it is giving me a stracciatella vibe!
ReplyDeleteI love the Apples for Jam cookbook, she has such great recipes. I will have to try this soup with mint, it looks so good!
ReplyDeleteI really should have had this when I was feeling sick this week. I love love love lemon in soups.
ReplyDeleteSimple yet satisfying. This soup looks like the perfect antidote to a cold winter day. Thanks again for sharing with me. You know how to make me smile. I hope you have a blessed weekend!

simple is always best! Thanks for sharing such a lovely dish :)
ReplyDeleteOh, I am all about the soup always, and if it has lemon in it, all the better! This is going on my short list. Maybe for today actually...lunch! Looks wonderful, thanks for picking it and bringing it to my attention.
ReplyDeleteI am trying to recall what I have had vermicelli in...I don't believe it was a soup...it had a sauce though. Darn, it will come to me! Wait, Rice-A-Roni! That's what I've had it in...did I really just admit that on one of the best chef bloggers websites? Please don't judge me! Lol.
