Vermicelli Soup w/ Lemon, Butter, & Mint

Some days are just made for simplicity.  Take for instance a Tuesday.  Last Tuesday.  The sun shone brilliantly against a cloudless sky, making for a beautiful yet brisk morning and afternoon (it is November, after all).  After spending a little over a half an hour at the school and catching up on a few straggling dishes from the morning and vacuuming the house, I felt like it was a day to keep things uncomplicated.  So with the sun warming the house through windows with the curtains thrown back, I decided it was the perfect time to catch up on a few of my shows waiting, anxious to be watched, in the DVR.  Since midday was in sight, I stopped in the kitchen on the way to the television.  It doesn't get much quicker than a brothy bowl full of simple noodle soup.  Within 15 minutes I was curled up with a steaming bowl to watch the season premiere of The Next Iron Chef.  Simple is good.
Vermicelli Soup w/ Lemon, Butter, & Mint
slightly adapted from Apples for Jam by Tessa Kiros
serves 4-6

7 c. chicken broth
juice of a lemon
2 Tbs. butter
4 oz. vermicelli, broken up
salt, as needed
freshly grated Parmesan cheese
freshly ground black pepper
4 mint leaves, torn (or a little crushed dried mint)

Pout broth, lemon juice, and butter in a pan.  Bring to a boil, then lower heat to simmer for 6-7 minutes before adding pasta.  Cook pasta until just al dente, season and add salt, if necessary.  Remove from heat and ladle into bowls.  Grate some Parm and black pepper over each bowl and then a scattering of mint.  Serve immediately.

  2. For some reason I never think about putting spaghetti type noodles in soup. Just the wide flat noodles. Love the combination of flavors here and great presentation. Thanks for posting the recipe Heather.

  11. Simple is good.  Just that little lemon floating on top makes me want a bowl.  (Of course, it helps that I love lemon!)  Looks delicate and elegant, yet homey at the same time.  Very pretty!

  17. Simply delectable! Which reminds me, I better get some stock brewing ASAP! Love the addition of mint too. This soup reminds me of a soup my grandmother use to make. At the last minute she would drizzle in a scrambled egg. I think it's called Stracciatella.

  18. Maybe this will appease my son.  For weeks he has been asking me to make a soup I did before that "was like Ramen and had skinny noodles in it".  For the life of me, I can't remember what he is talking about.

  20. If my mum would have made a vermicelli soup with lemon, I would have finnished the bowl. But my mum didnt and I ended not liking soups. So mum and dads out there, give your children good food, like this deliciouse soup recipe from Girlichef. ;)

  25. You know what's funny Lea Ann?  I was thinking that exact same thing when I was making this.  I actually do prefer the wider, flatter noodles in my soup, but this was a nice change. Another option, ya know?  ;)

  41. I am trying to recall what I have had vermicelli in...I don't believe it was a soup...it had  a sauce though.  Darn, it will come to me!  Wait, Rice-A-Roni!  That's what I've had it in...did I really just admit that on one of the best chef bloggers websites? Please don't judge me!  Lol.
