If you need a refresher, I'm going back to episode 2 of season 6 again. The episode is titled "JSS" after the mantra that Enid created for herself - just survive somehow. We finally get a glimpse into Enid's past. We see how she loses her family and makes her way to the walls of Alexandria.
Alone, scared, and on a quest to survive, there's a quiet moment that turns into Enid goes savage on a turtle. Totally understandable. But as I watched her "refuel" and spell out her mantra in turtle bones, I knew right then and there that I'd be making some turtles in her honor. And in the honor of that little shelled guy that kept her going that day.
I did contemplate making turtle soup, but turtle isn't the easiest meat to com buy in these parts. Believe it or not, I've actually tried turtle. Once...years ago...in culinary school...and I don't really remember the taste. I could have gone the mock turtle soup route (and still may for a future TWD inspired post), but I decided to stick with the more desired, if less sustaining, variety of turtle this time.
Plus, I went the easy route. I almost went all out and made homemade caramel and melted milk chocolate, but I wanted to do something super quick and easy. Heck, something that even the gang could make it they got lucky and ran across a stash of Rolos (milk chocolate covered chewy caramel candies) in a tucked away supermarket or convenience store. And you know, if they were still in the land of pecan trees.
So these are done in 5 minutes...just time enough for the candy to soften in the oven. I love the way the indentations from the top of the candy look like markings from a turtle shell once you flatten it. It's a good thing that they are so simple to make because they will disappear in a second. The hardest part of making these is waiting until they have cooled completely before eating them (otherwise they won't set up and the feet - aka pecans - will fall off).
Shortcut Homemade Turtles
Want homemade turtles without all the fuss? Simply melt milk chocolate covered chewy caramels over pecans and satisfy that craving in 5 minutes!

Ingredients (16 pieces)
- 64 small whole pecan halves
- 2 rolls of Rolos (16 pieces)
- nonstick spray
Instructions
Preheat oven 350° F.
Line a baking sheet with parchment paper. Make 16 sets of 4 pecans on the baking sheet, the tips touching each other. Set one Rolo on the center of each cluster of pecans.
Slide into preheated oven for 5 minutes. Remove tray from oven. Working quickly, spray the back of a spoon with nonstick spray, then use it to press each Rolo flat; re-applying nonstick spray before using each time.
Allow to cool completely so that they can set.
