I know it's been a while since I've shared a recipe inspired by The Walking Dead, but I'm sharing one today to mark the mid season 7 premiere. So, the thing is, I had an extremely rough time with the first half of the season. Episode 1 brought on a ton of anxiety, that seemed to carry me through the season. It was so brutal and heart-breaking that just typing the words are making me cry. Literally. Sometimes my extreme empathic nature feels like a curse.

That said, I couldn't create any recipes, it just didn't feel right. Fortunately, the mid season finale finally let in a ray of light...and a twinkle of hope. With that hope comes the ability for me to make a dish in tribute of the ones we lost that day, Abraham and (my favorite character) Glenn.

I thought it would be fun to pull my inspiration from a scene that the two of them were in together (S6:E11 "Knots Untie"). A handful of the gang was in the RV on their way to the Hilltop, when Abraham asks Glenn a truly "Abraham type of question"...and Glenn answers in his usual hopeful way.

When you were, uh, pouring the Bisquick, were you trying to to make pancakes?


And while I could have made pancakes from scratch, where would the fun in that have been? I mean, there's nothing wrong with using a box of Bisquick—I grew up with Bisquick pancakes!

But, and I almost hate myself for this, the delicious raspberry maple syrup runs all sticky and red down the sides—whole raspberries that look like bits of brain matter? It signifies their demise. The moment that hope and valor were torn so brutally out from under us.

But I don't want to talk about that. I will never watch that episode again. I just can't.

I can close my eyes and enjoy a tall stack of these pancakes smothered in raspberry syrup, though. They only bring happy emotions.

Bisquick Pancakes w/ Raspberry Maple Syrup

Fresh raspberry maple syrup poured over intentional Bisquick pancakes, is a nod to Glenn and Abraham (The Walking Dead), and a sad reminder of how we lost them.

INGREDIENTS:

For the pancakes:
  • 1 recipe Bisquick Ultimate Pancakes, prepared as directed on the box (or more)
For the raspberry maple syrup:
  • 12 ounces fresh raspberries, rinsed
  • 1 cup real maple syrup

INSTRUCTIONS:

  1. While you're making the pancakes, per the recipe on the Bisquick box, combine most of the raspberries with the maple syrup in a small saucepot over medium heat on the stove (save a few for the later). Let it bubble, then use a barbed wire-wrapped wooden baseball bat (or a wooden spoon) to bash the raspberries to a pulp.
  2. Remove from heat. If you like, pass a portion of the syrup through a wire-mesh strainer. Stir in the reserved whole berries (or save them and add them to your plate).
  3. Serve a tall stack of Bisquick pancakes smothered in warm raspberry maple syrup, trying not to cry while you consume them. You know, because they're so good - not because hope and valor have just been ripped out from under you in the most horrible way imaginable.
